Ingredients

  • 25 to 30 small cucumbers
  • 2 c. lime (calcium hydroxide)
  • 2 gal. water
  • 6 c. sugar
  • 2 tsp. whole cloves
  • 1 tsp. salt
  • 2 qt. white vinegar

Instructions

  1. Slice cucumbers 1/8-inch thick.
  2. Dissolve lime in water in a glass, stone or stainless steel container.
  3. Add cucumbers, being sure that cucumbers are covered with liquid.
  4. Let stand 24 hours. Rinse well, let stand 3 hours in clear water and drain.
  5. Mix vinegar, sugar, cloves and salt.
  6. Pour over cucumbers and let stand overnight.
  7. Bring to boil, and boil 35 minutes.
  8. Fill sterilized jars to 1/2-inch of top.
  9. Seal, boil jars in hot water bath for 5 minutes. Chill pickles before serving.
