Pom Corn Relish

Ingredients

  • 1 cup arils from 1 large POM Wonderful Pomegranate
  • 1 cup corn, fresh or frozen
  • 1/2 cup green pepper, finely chopped
  • 1 tablespoon fresh basil, finely chopped

Instructions

  1. 1. Score 1 fresh pomegranate and place in a bowl of water. Break open the pomegranate underwater to free the arils (seed sacs). The arils will sink to the bottom of the bowl and the membrane will float to the top. Sieve and put the arils in a separate bowl. Reserve 1 cup of arils from fruit and set aside. (Refrigerate or freeze remaining arils for another use.)
  2. 2. Combine all ingredients and mix well.
  3. 3. Refrigerate until ready to serve.
  4. Serve this relish with barbecued or grilled steak.
