Ingredients

  • 1 possum
  • 2 or 3 pods red pepper
  • salt to taste
  • butter
  • 2 cups flour
  • 1 to 2 quarts milk

Instructions

  1. Try to get a possum that has been dead no longer than 3 days and doesn't have any tire marks on his back.
  2. Add the possum to a pot of boiling water, along with the red pepper pods, salt, and butter. Cook for 3 to 6 hours.
  3. If the possum isn't tender, you'll know you got an old one.
  4. Combine the milk and flour.
  5. Add small quantities of the milk and flour mixture to the possum and broth.
  6. Stir constantly to prevent sticking to the pot.
  7. If the possum sticks to the pot, pry him off.
  8. Pull his tail; that usually works best.
