Potato Enchiladas

Instructions
- Soften tortillas by dipping in hot oil (do not cook long, they will be tough).
- Fry potatoes to soft stage.
- Fry ground meat with onions.
- Melt cheese with Ro-Tel tomatoes.
- Roll mixture of meat and potatoes in each tortilla.
- Place in a large baking pan or dish.
- Cover with melted cheese and Ro-Tel mixture.
- Bake at 350° until cheese bubbles.
