Ingredients

  • 1 cup light mayonnaise
  • 1 stick margarine, melted
  • 2 or 3 tablespoons Dijon mustard
  • 8 boneless skinless chicken breasts
  • 1 (16 oz.) package herb stuffing mix

Instructions

  1. Mix mayonnaise, melted margarine, and Dijon mustard together.
  2. Make fine crumbs from the stuffing mix.
  3. Dip chicken breasts in the mayonnaise mixture, then roll in the crumbs.
  4. Place the coated chicken breasts in an ungreased dish.
  5. Cover with foil and bake at 350°F for 1 hour.
  6. Remove foil during the last 10 minutes of baking.
