Ingredients

  • 1 small package vanilla or coconut pudding (not instant)
  • 1 1/4 cups milk
  • 1/3 cup sugar
  • 1 teaspoon vanilla or almond extract
  • 1 cup heavy cream

Instructions

  1. Combine pudding mix, milk, and sugar in a saucepan.
  2. Stir over medium heat until the mixture comes to a full boil.
  3. Remove from heat, cover with waxed paper, and chill.
  4. Beat the pudding; add vanilla or almond extract.
  5. Whip the heavy cream and fold it into the pudding mixture.
  6. Pour into paper cups or muffin tins.
  7. Sprinkle with toasted coconut and top with maraschino cherries.
  8. Freeze until firm and serve directly from the freezer.
