Ingredients

  • 2 quail per person
  • 2 cups cooked wild rice
  • salt
  • pepper

Instructions

  1. Wipe the quail with a damp cloth or paper towel.
  2. Fill each quail cavity with cooked wild rice.
  3. Sprinkle the quail with salt and pepper.
  4. Wrap each quail with a slice of bacon.
  5. Wrap each bird securely in heavy-duty aluminum foil.
  6. Bury the wrapped birds in hot charcoal ashes in a campfire, barbecue pit, or fireplace.
  7. Roast for about 30 minutes, then check for tenderness.
  8. Ensure that the birds are uniformly covered with hot ashes throughout cooking.
