Quick Lima Bean Bake

Ingredients

  • 2 c. lima beans, cooked and drained (garden fresh is best)
  • 1 (8 oz.) can whole kernel corn, drained
  • 1 (8 oz.) can stewed tomatoes
  • 1/4 c. quick cooking rice
  • 1/2 tsp. dried Italian seasoning, crushed
  • 1/4 c. shredded Parmesan cheese

Instructions

  1. Place beans in a 1 1/2-quart casserole.
  2. Stir in corn, tomatoes, rice and Italian seasoning.
  3. Bake, covered, in a 350° oven for 25 to 30 minutes.
  4. Stir.
  5. Top with cheese.
  6. Bake 5 minutes more.
  7. Serves six.
