Quick Raisin Rice Pudding

Ingredients

  • 3/4 c. precooked rice
  • 1/2 c. seedless raisins
  • 1/4 c. sugar
  • 1/2 tsp. salt
  • dash of cinnamon
  • dash of nutmeg
  • 2 c. milk
  • 2 slightly beaten eggs

Instructions

  1. In saucepan, combine rice, raisins, sugar, salt and spices. Add milk.
  2. Cook, stirring constantly, until mixture comes to a boil.
  3. Remove from heat.
  4. Stir well a small amount of mixture into eggs.
  5. Return to remaining mixture.
  6. Cover tightly.
  7. Let stand 45 minutes.
  8. Makes 6 servings.
