Raspberry Jello Pie

Ingredients

  • 3/4 c. sugar
  • 2 Tbsp. cornstarch
  • 1 1/2 c. water
  • 1 pkg. raspberry jello
  • 1 Tbsp. lemon juice
  • 1 qt. raspberries
  • one baked pie crust
  • whipped cream (for topping)
  • few berries (for garnish)

Instructions

  1. Combine sugar, water and cornstarch and cook (about 5 to 6 minutes) until thick and clear.
  2. Add small package jello.
  3. Stir in lemon juice.
  4. Cool in fridge; when cool, add raspberries and cool again.
  5. Pour into baked pie crust.
  6. Top with whipped cream (about 1 pint) and garnish with a few berries.
