Raspberry Tapioca Parfait

- Follow the directions on the Minute tapioca box, for fluffy tapioca cream, adding a teaspoon of orange vanilla extract along with the vanilla.
- Stir well after 20 minutes.
- When cold, fold in a half pint of cream that has been whipped.
- In parfait glasses, alternate layers of tapioca and 3 or 4 defrosted raspberries and a dribble of juice (about 3 layers of tapioca) and top with a few berries and a bit of juice.
- Serves 6 to 8.
