Red Onion Mash

Instructions
- Boil potatoes in plenty of salted water for about 20 mins.
- Heat butter in med' sized non stick frying pan over a med'/low heat & sweat onions 'till soft ( not brown ). Set aside.
- Drain potatoes, add the milk & mash to a smooth consistency.
- Add the onion mixture with the butter & stir through.
- Done :)
