Red Pepper Pasta

Ingredients

  • 4 red, yellow or orange peppers
  • 1 large onion
  • 28 oz. crushed tomatoes (canned)
  • 1 lb. pasta

Instructions

  1. Saute chopped peppers and onion in a bit of oil, preferably olive oil.
  2. Add canned tomatoes and simmer 15 minutes until peppers are soft.
  3. Puree at least half of the sauce and add back to remaining sauce.
  4. Serve over cooked pasta.
