Ingredients

  • 1 c. red wine
  • 2 Tbsp. tarragon vinegar
  • 2 Tbsp. vegetable oil
  • 1 tsp. oregano
  • 2 cloves garlic, minced

Instructions

  1. Combine all ingredients in a small bowl.
  2. Pour over beef, poultry or shrimp in a plastic bag, shallow dish or marinating dish.
  3. Seal bag or cover dish.
  4. Refrigerate at least 2 hours, turning occasionally.
  5. Drain, reserving marinade.
  6. Grill as desired, basting often with marinade.

Tips & Substitutions

For a deeper flavor, allow the marinade to sit for an hour before using. If you don't have tarragon vinegar, white wine vinegar can be a suitable substitute. For a variation, add a teaspoon of smoked paprika for a subtle smoky flavor. This marinade works wonderfully for beef, poultry, or shrimp, and can also enhance grilled vegetables or tofu.

Serving Suggestions

Serve your marinated grilled meat or seafood alongside a fresh Grape-Cantaloupe Salad for a refreshing contrast. Roasted vegetables or a simple rice pilaf make excellent sides that pair well with the rich flavors of the marinade. For a unique twist, consider drizzling some Pineapple Glaze over the dish just before serving.

Storage & Reheating

Leftover marinade can be stored in an airtight container in the refrigerator for up to a week. To reheat, simply warm it gently on the stovetop, ensuring it doesn't boil to retain flavor. If using the marinade for basting, it should be boiled first to ensure food safety before applying to grilled items.

Frequently Asked Questions

Can I use this marinade for vegetables?

Absolutely! This marinade is versatile and can enhance the flavors of grilled vegetables. Just ensure to adjust the marinating time based on the type of vegetables you use, as softer vegetables, like zucchini, require less time than sturdier ones, like bell peppers or eggplant.

How long should I marinate my meat?

For best results, marinate your meat for at least 2 hours, but overnight is even better for deeper flavor infusion. Just be cautious not to exceed 24 hours, especially with delicate proteins like shrimp, as they can become mushy due to the acidity in the marinade.

Can I freeze the marinated meat?

Yes, you can freeze marinated meat! Place it in a freezer-safe bag and remove as much air as possible. It can be stored in the freezer for up to 3 months. Thaw it in the refrigerator to maintain texture and flavor before grilling.
