Ingredients

  • 1/4 cup light brown sugar
  • 1 tablespoon grated orange peel
  • 1 clove garlic, crushed
  • 1 1/2 teaspoons salt
  • 1/2 teaspoon nutmeg
  • 1/4 teaspoon pepper
  • 1/8 teaspoon ground cloves
  • 2 pounds red cabbage, shredded
  • 3 medium onions, sliced
  • 3 medium cooking apples, pared, cored, and sliced
  • 1 large red pepper, cut into thin strips
  • 1/2 cup orange juice
  • 1/4 cup wine vinegar

Instructions

  1. Preheat oven to 350 degrees Fahrenheit.
  2. In a small bowl, combine light brown sugar, grated orange peel, crushed garlic, salt, nutmeg, pepper, and ground cloves.
  3. In a large skillet or Dutch oven, sauté sliced onions and apples until tender.
  4. Add shredded red cabbage, red pepper strips, orange juice, and wine vinegar to the skillet.
  5. Stir in the sugar and spice mixture until well combined.
  6. Cover and bake in the preheated oven for about 45-60 minutes, stirring occasionally.
  7. Meanwhile, cook kielbasa in a separate skillet until browned and cooked through.
  8. Serve the kielbasa alongside the simmered red cabbage mixture.
