Ingredients

- 1 tablespoon grated orange peel

- 1 1/2 teaspoons salt ⓘ
- 1/2 teaspoon nutmeg
- 1/4 teaspoon pepper ⓘ
- 1/8 teaspoon ground cloves ⓘ
- 2 pounds red cabbage, shredded ⓘ
- 3 medium onions, sliced ⓘ
- 3 medium cooking apples, pared, cored, and sliced ⓘ
- 1 large red pepper, cut into thin strips ⓘ
- 1/2 cup orange juice
- 1/4 cup wine vinegar ⓘ
Instructions
- Preheat oven to 350 degrees Fahrenheit.
- In a small bowl, combine light brown sugar, grated orange peel, crushed garlic, salt, nutmeg, pepper, and ground cloves.
- In a large skillet or Dutch oven, sauté sliced onions and apples until tender.
- Add shredded red cabbage, red pepper strips, orange juice, and wine vinegar to the skillet.
- Stir in the sugar and spice mixture until well combined.
- Cover and bake in the preheated oven for about 45-60 minutes, stirring occasionally.
- Meanwhile, cook kielbasa in a separate skillet until browned and cooked through.
- Serve the kielbasa alongside the simmered red cabbage mixture.
