Rex'S Green Eggs

Ingredients

  • 3 c. greens, cooked (or canned)
  • 3 Tbsp. margarine
  • 6 eggs
  • 1/2 c. cheese, finely cut up or shredded

Instructions

  1. Drain liquid from greens into pan.
  2. Cook liquid until only a little is left in pan.
  3. Add greens, salt, pepper and margarine and bring to boiling.
  4. Break eggs on top of greens and sprinkle with cheese.
  5. Cover and cook slowly until eggs are done and cheese is melted.
  6. Serves 6.
