Ingredients

  • 1 egg, separated
  • 1/3 cup sugar
  • 3 tablespoons tapioca
  • 1/8 teaspoon salt
  • 2 cups milk
  • 3 tablespoons raisins
  • 1/2 cup cooked rice, cooled
  • 1 teaspoon vanilla

Instructions

  1. Mix slightly the beaten egg yolk, 3 tablespoons sugar, tapioca, and salt in a saucepan.
  2. Add milk and cook, stirring frequently, until mixture is slightly thickened.
  3. Beat egg white until stiff. Gradually beat in remaining sugar.
  4. Add the beaten egg whites to the hot mixture along with raisins, cooked rice, and vanilla. Mix thoroughly.
  5. Allow the pudding to cool before serving.
