Rice Pudding(Riskrem)

Ingredients

  • 3 c. milk
  • 2 c. precooked rice
  • 1/2 tsp. vanilla
  • 3/4 c. sugar
  • 2 envelopes gelatin
  • 1/4 c. chopped almonds
  • 4 Tbsp. butter or margarine
  • 1 c. heavy cream, whipped

Instructions

  1. Bring milk to a boil; add rice, vanilla and sugar.
  2. Simmer over medium heat until cooked; or, if instant rice is used, cover and let stand 5 minutes over lowest heat.
  3. Remove from heat and stir in gelatin which has been softened in 1/4 cup cold water.
  4. Cool.
  5. Fold in whipped cream.
  6. Pour into a 2-quart mold; chill until set. Unmold and serve cold with a red sauce.
