Rich Tea Scones

- Preheat oven to 400°.
- Coat a large baking sheet with softened butter. In a large, chilled mixing bowl, combine flour, salt and chilled butter.
- Rub mixture together with fingertips until it resembles coarse meal.
- Beat the egg with a whisk until frothy. Remove 1 tablespoon and set aside.
- Add milk to the remaining egg and pour over the flour mixture.
- Toss with a fork until dough can be gathered into a ball.
- Roll dough to 1/4-inch thickness on a lightly floured surface.
- Cut the dough into 2-inch rounds with a glass or cookie cutter.
- Place 1 inch apart on the prepared baking sheet.
- Brush the tops lightly with the reserved egg.
- Bake 15 minutes or until light brown.
- Serve at once on a heated platter. Makes about 12.
