Ingredients

  • 12 pieces boneless chicken breasts
  • 2 (8 oz.) bottles Russian dressing
  • 2 (12 oz.) jars apricot preserves
  • 1 pkg. dry onion soup mix

Instructions

  1. Batter the chicken in a mixture of Bisquick mix and yellow corn meal and brown quickly in some vegetable oil.
  2. Remove chicken and place in a Pyrex baking dish.
  3. Mix in a mixing bowl the Russian dressing, apricot preserves and dry onion soup mix.
  4. Pour over the chicken and bake for 45 minutes at 350°.
  5. Serve over rice.
