Roasted Maple Apple Crunch

Ingredients

  • 1/4 cup dried cranberries
  • 1 cup hot water
  • 4 large apples (about 2 lb.)
  • 1 tablespoon fresh lemon juice
  • 2 tablespoons unsweetened apple cider or juice
  • 2 tablespoons pure maple syrup
  • 1 tablespoon unsalted butter
  • 1/3 cup low-fat granola

Instructions

  1. Preheat oven to 400°F. In a small bowl, combine cranberries and hot water and let stand.
  2. Peel, quarter and core the apples; place in a 9-inch square baking dish or glass pie pan, drizzle with lemon juice and toss well. Combine apple cider, maple syrup and butter in a small bowl and microwave for 2 minutes to melt butter.
  3. Spoon maple mixture over apples, cover pan with foil and bake for 20 minutes. Uncover pan and bake until apples are tender and slightly browned on the edges, about 25 minutes longer. Drain cranberries and sprinkle evenly on top of apples. Sprinkle granola on top. Serve apples warm.
