Roasted Plum Tomatoes

Ingredients

  • Plum tomatoes
  • Shallots
  • Garlic
  • Fresh Basil
  • Oregano
  • Thyme
  • Kosher or Sea salt, Cracked pepper
  • Your favorite olive oil

Instructions

  1. Preheat oven to 250
  2. Halve tomatoes legnthwise
  3. Remove seeds, pulp and stem end
  4. Place on roasting rack on a sheet pan
  5. Mince shallots and garlic, add to bowl
  6. Chop herbs, add to bowl
  7. Add S & P to bowl
  8. Add Olive Oil
  9. Mix well
  10. Spoon mixture into each tomato
  11. Place in middle of oven for 21/2 - 3 hours intil the edges resemble a prune
  12. Pierce each tomato to drain oil
  13. Serve with crusty bread rounds (fresh or toasted)
