Ingredients

  • 8 cups vegetable broth
  • 1/2 medium red cabbage, finely shredded and minced
  • 8 tablespoons lemon juice
  • salt and pepper

Instructions

  1. Prepare a good vegetable broth.
  2. Place the finely chopped cabbage, lemon juice, salt, and pepper in a deep bowl.
  3. Let the mixture sit for an hour, stirring from time to time.
  4. Bring the broth to a boil, add the cabbage and all contents of the bowl, and cook for about 5 minutes. Serve immediately after.
