Ingredients

  • 1 1/2 c. boiling water
  • 1 c. pineapple juice
  • 1/2 c. grated carrots, chopped nuts and chaffed celery
  • 1 tsp. sugar
  • dash of salt
  • 1 pkg. either lemon, lime or orange Jell-O
  • 1 Tbsp. vinegar or lemon juice

Instructions

  1. When Jell-O has cooled, add all ingredients and let set until congealed.
  2. This is especially good served with a cottage or cream cheese dressing on lettuce.
