Salmon Manicotti

Ingredients

  • 8 manicotti
  • 2 cups cooked flaked salmon
  • 1 cup grated cheddar cheese
  • 1 cup grated mozzarella cheese
  • 1 teaspoon lemon juice
  • 6 tablespoons sour cream
  • 1/2 onion, finely chopped

Instructions

  1. Heat oven to 350 degrees.
  2. Cook manicotti shells according to package directions.
  3. Mix together remaining ingredients except tomato sauce.
  4. Stuff shells with mixture.
  5. Pour about 3/4 of the tomato sauce over the bottom of a large baking pan and place shells on top.
  6. Spread the remaining sauce over the top of the shells to keep moist.
  7. Bake about 20 minutes or until sauce is bubbly and cheese is melted.
  8. You can sprinkle more cheese on the top while baking.
  9. ENJOY!
