Sauteed Broccoli Rabe
A vibrant, garlicky sauté of broccoli rabe with a touch of red pepper, perfect as a side or over pasta for a hearty, nutritious meal.

- Rinse the broccoli rabe and drain well.
- Steam the broccoli rabe in a covered pot or microwave on high for about 5 to 8 minutes.
- Cover the bottom of a deep-sided frypan or Dutch oven with about 1/8 inch of olive oil.
- Cut the garlic cloves into slivers.
- When the oil is warm, add the garlic and sauté until transparent.
- Carefully add the steamed broccoli rabe to the pan (it may splatter).
- Add crushed red pepper to taste and sauté for about 8 minutes.
