Sauteed Broccoli Rabe

A vibrant, garlicky sauté of broccoli rabe with a touch of red pepper, perfect as a side or over pasta for a hearty, nutritious meal.

Ingredients

  • 2 lb broccoli rabe
  • 2 Tbsp olive oil
  • 4 large garlic cloves
  • crushed red pepper to taste

Instructions

  1. Rinse the broccoli rabe and drain well.
  2. Steam the broccoli rabe in a covered pot or microwave on high for about 5 to 8 minutes.
  3. Cover the bottom of a deep-sided frypan or Dutch oven with about 1/8 inch of olive oil.
  4. Cut the garlic cloves into slivers.
  5. When the oil is warm, add the garlic and sauté until transparent.
  6. Carefully add the steamed broccoli rabe to the pan (it may splatter).
  7. Add crushed red pepper to taste and sauté for about 8 minutes.
