Savory Tomato Pie

Ingredients

  • 5-6 Large ripe tomatoes
  • 1 (9-inch) Unbaked pie crust
  • 1/2 tsp salt
  • 1/2 tsp ground black pepper
  • 1/4 cup thinly sliced fresh basil leaves
  • 1 cup Mayonaise (or reduced calorie mayo)
  • 2 cups shredded cheese, cheddar, mozzarella or Parmesan. I like a mixture of all three.

Instructions

  1. Preheat the oven to 375 degrees. Bring a large pot of water to boil; have a bowl of ice water nearby. Blanch the tomatoes and submerge in the ice water. Peel the tomatoes, personally the peel does not bother me. Slice the tomatoes in half across the "equator" and deseed. Slice the tomatoes in thick slices and layer on paper toweling, pat dry. Remove as much moisture as possible without crushing the slices.
  2. Line the crust with foil and pie weights or dry beans/rice. Bake of 5-10 minutesor until crust is lightly golden. Remove from oven and reduce temperature to 350 degrees.
  3. Cover the bottom of the pie crust with a layer of tomato slices. Sprinkle lightly with salt, pepper and basil. Top with remaining tomato slices and sprinkle with seasonings again. In a small bowl combine mayo and cheese. Spread evenly over the pie. Bake for 30 to 40 minutes or until the top of the pie is golden brown. Cover the edges of the crust with foil if edges start to get to brown.
  4. Serve warm.
  5. Enjoy!
