Scallop Salad

A fresh and vibrant scallop salad featuring tender broiled scallops, citrusy orange slices, and a herbaceous vinaigrette, perfect for light, elegant dining or entertaining.

Ingredients

  • 1 lb. sea scallops
  • 1 Tbsp. fresh cilantro, minced
  • 1/4 cup fresh chives, chopped
  • 1 Tbsp. grated orange rind
  • 1 orange, sliced
  • 1 cup herb vinaigrette dressing

Instructions

  1. Toss the scallops with 1/2 cup of the herb vinaigrette dressing and cover to refrigerate for 1 hour to marinate.
  2. Spread the marinated scallops on an ungreased baking sheet and broil until almost cooked, keeping in mind they will continue to cook after removal.
  3. Mix the remaining 1/2 cup of vinaigrette dressing with minced cilantro, chopped chives, and grated orange rind to prepare the herb mixture.
  4. Add the cooked scallops with any cooking liquid to the herb mixture and toss gently to combine.
  5. Cover and refrigerate the scallop mixture for another hour.
  6. To serve, place greens on each plate, arrange orange slices, and top with an equal portion of the scallop mixture.
