Scallop Salad
A fresh and vibrant scallop salad featuring tender broiled scallops, citrusy orange slices, and a herbaceous vinaigrette, perfect for light, elegant dining or entertaining.

- Toss the scallops with 1/2 cup of the herb vinaigrette dressing and cover to refrigerate for 1 hour to marinate.
- Spread the marinated scallops on an ungreased baking sheet and broil until almost cooked, keeping in mind they will continue to cook after removal.
- Mix the remaining 1/2 cup of vinaigrette dressing with minced cilantro, chopped chives, and grated orange rind to prepare the herb mixture.
- Add the cooked scallops with any cooking liquid to the herb mixture and toss gently to combine.
- Cover and refrigerate the scallop mixture for another hour.
- To serve, place greens on each plate, arrange orange slices, and top with an equal portion of the scallop mixture.
