Ingredients

  • 3 lbs pot roast (chuck roast)
  • 2 large white onions, sliced
  • 2 lbs carrots, peeled & cut
  • 8 medium potatoes, peeled & cut
  • 1 (10 ounce) can cream of onion soup
  • 1 (1 1/4 ounce) package onion soup mix
  • 1 cup red wine

Instructions

  1. Rinse meat, arrange in rectangular baking dish or in crock pot.
  2. Arrange carrots, potatoes and onions around meat.
  3. Whisk all liquids and soup mix together, pour over meat and veg.
  4. Bake 4 hours @ 350°F in oven (cover with foil) or in crock pot for 8 hours on low, or until fork-tender.
