Ingredients

  • 2 envelopes unflavored gelatin
  • 3 cups milk
  • 3 eggs
  • 1/2 cup mint jelly
  • 3/4 teaspoon mint extract
  • 1/2 teaspoon green food coloring
  • 1/2 cup sugar
  • 2 cups whipped topping
  • 1 angel food cake (10-inch), torn into small pieces

Instructions

  1. Sprinkle gelatin over milk in a saucepan and let it sit for a few minutes.
  2. Beat egg yolks until light and lemon-colored.
  3. Stir the beaten egg yolks into the milk mixture.
  4. Cook over low heat, stirring constantly, until gelatin dissolves, about 5 minutes.
  5. Stir in mint jelly until melted, then remove from heat.
  6. Stir in mint extract and green food coloring.
  7. Chill the mixture, stirring occasionally, until it mounds slightly when dropped from a spoon.
  8. Beat egg whites in a large bowl until stiff peaks form.
  9. Gradually add sugar and beat until stiff but not dry.
  10. Fold whipped topping into the gelatin mixture.
  11. Gently fold torn angel food cake into the gelatin mixture.
  12. Pour the mixture into a 12-cup mold.
  13. Chill for 4 hours or overnight.
  14. Unmold and serve.
