Simmered Squash

Ingredients

  • 1 1/2 Tbsp. canola oil
  • 1 to 1 1/2 yellow squash, sliced thin
  • 1 to 1 1/2 white potatoes, sliced thin
  • 1 large onion, sliced thin
  • salt and pepper to taste

Instructions

  1. Put oil in large skillet with lid; layer onion, potatoes and squash (lightly salt and pepper each layer) in skillet.
  2. Cover with lid and simmer on stove top for 1 to 1 1/2 hours until tender.
