Sloooow Roasted Tomatoes

Ingredients

  • 4 tablespoons olive oil (approx.)
  • 16 plum tomatoes
  • 2 teaspoons salt (or to taste)
  • 1 tablespoon sugar (or splenda)

Instructions

  1. Preheat the oven to 170F (or lowest setting your oven will go).
  2. Cut the tomatoes in half, lengthwisel.
  3. Slide the knife round the inside of each half to remove the pulp and seeds, leaving you with little boats.
  4. Arrange tomato halves on baking trays so that they do not touch.
  5. Dribble in a little olive oil in each half.
  6. Sprinkle sparingly with salt and sugar.
  7. Put in the oven and check them periodically over the next few hours.
  8. When they are shriveled and somewhat dried out, they are done (usually after 3 or 4 hours).
