Southern Beans is a hearty, comforting dish featuring tender string beans, diced tomatoes, and crispy bacon, perfect for family gatherings or casual weeknight dinners.

Ingredients

  • bacon
  • 1 large onion
  • 2 qt. string beans
  • 1 qt. diced tomatoes

Instructions

  1. Fry 8 to 10 slices of bacon until crispy. Drain, cool, and break into small pieces.
  2. Using part of the bacon drippings, sauté the diced onion until tender.
  3. Drain the string beans.
  4. In a large pan, combine the drained string beans and diced tomatoes.
  5. Add the bacon drippings and sautéed onions to the pan.
  6. Cover and simmer until heated through.
  7. Use a draining spoon to dip out the beans and tomatoes.
  8. Place them in a long casserole dish.
  9. Sprinkle with the bacon pieces before serving.
