Spaghetti Napoletana

Ingredients

  • 1/4 cup olive oil
  • 1 large onion, finely chopped
  • 2 cloves garlic, crushed
  • 1 sprig thyme
  • 2 lbs ripe plum tomatoes, cored and chopped
  • 13 oz spaghetti
  • 1/2 bunch basil, leaves chopped

Instructions

  1. Heat oil in a large saucepan on medium heat. Cook and stir onion and garlic for 5 mins or until golden. Add thyme and tomato; bring to a boil. Reduce heat to low; simmer, uncovered, for 40 mins or until sauce is thick.
  2. Meanwhile, cook pasta in saucepan of boiling salted water according to package directions. Drain.
  3. Add basil to sauce; cook and stir for 5 mins. Season to taste with salt and freshly ground black pepper. Serve pasta topped with sauce and sprinkled with cheese.
