Ingredients

  • 1/4 cup olive oil
  • 1/4 cup chopped parsley
  • 2 None lemons, grated peel only
  • 2 None oranges, grated peel only
  • 6 cloves garlic, thinly sliced
  • 2 tbsp fennel seeds
  • 4 None dried chili peppers, finely chopped
  • 6 None chicken legs

Instructions

  1. Preheat the oven to 400°F. Mix all of the ingredients except chicken in a small bowl. Rub mixture generously on chicken.
  2. Heat a flameproof roasting pan on high heat. Cook the chicken until browned on both sides.
  3. Roast in the oven about 45 mins until chicken is cooked through. Allow to rest for a few minutes before serving.
