Ingredients

  • 2 1/2 to 3 cups pecans
  • 1 cup sugar
  • 1/2 cup water
  • 1 1/2 teaspoons cinnamon
  • 1/2 teaspoon salt
  • 1 1/2 teaspoons vanilla

Instructions

  1. Preheat the oven to a moderate temperature.
  2. Heat the pecans in the oven for 5 minutes, stirring once.
  3. In a saucepan, combine sugar, water, cinnamon, and salt; bring to a boil.
  4. Reduce heat and simmer until the mixture thickens slightly.
  5. Remove from heat and stir in vanilla.
  6. Add the toasted pecans to the syrup, stirring to coat evenly.
  7. Spread the coated pecans on a baking sheet and bake until caramelized and crunchy.
  8. Allow to cool before serving.
