Ingredients

  • 2 1/2 cups English walnut halves
  • 1 cup sugar
  • 1/2 cup water
  • 1 teaspoon cinnamon
  • 1/2 teaspoon salt
  • 1 1/2 teaspoons vanilla

Instructions

  1. Heat walnut halves in a moderate oven (375°F) for 5 minutes, stirring once.
  2. Butter the sides of a heavy 2-quart saucepan.
  3. In the saucepan, combine sugar, water, cinnamon, and salt.
  4. Heat and stir until the sugar dissolves and the mixture comes to a boil.
  5. Cook without stirring until the mixture reaches soft ball stage (236°F).
  6. Remove from heat.
  7. Beat by hand for one minute or until the mixture begins to get creamy.
  8. Add vanilla and warm walnuts.
  9. Stir until coated.
  10. Turn the mixture out onto a buttered platter.
  11. Separate the walnuts immediately using two forks.
