- Heat walnut halves in a moderate oven (375°F) for 5 minutes, stirring once.
- Butter the sides of a heavy 2-quart saucepan.
- In the saucepan, combine sugar, water, cinnamon, and salt.
- Heat and stir until the sugar dissolves and the mixture comes to a boil.
- Cook without stirring until the mixture reaches soft ball stage (236°F).
- Remove from heat.
- Beat by hand for one minute or until the mixture begins to get creamy.
- Add vanilla and warm walnuts.
- Stir until coated.
- Turn the mixture out onto a buttered platter.
- Separate the walnuts immediately using two forks.
