Ingredients

  • 1 1/2 lb. carrots, scraped and cut into thin strips
  • 1 1/2 tsp. cornstarch
  • 1/3 c. water
  • 1 1/2 Tbsp. lemon juice
  • 1 Tbsp. chopped fresh dill
  • 1 1/2 tsp. reduced calorie margarine
  • 1/2 tsp. grated lemon rind
  • 1/4 tsp. salt

Instructions

  1. Arrange carrots in a steamer basket; place over boiling water. Cover and steam 4 minutes or until crisp-tender.
  2. Transfer carrots to a serving dish; keep warm.
  3. Combine cornstarch, water, and lemon juice in a small saucepan, stirring until smooth.
  4. Bring to a boil over medium heat, stirring constantly.
  5. Boil 1 minute, stirring constantly.
  6. Remove from heat; add dill and remaining ingredients, stirring until margarine melts.
  7. Toss with carrots and serve.
