Spinach Salad With Mint

Ingredients

  • 14 cup oil
  • 1 12 tablespoons fresh lemon juice
  • 14 cup finely chopped mint
  • 14 teaspoon sugar
  • 14 teaspoon pepper
  • 18 teaspoon salt
  • 6 cups torn spinach
  • 1 peeled segmented pink grapefruit
  • 2 thinly sliced green onions

Instructions

  1. Whisk 1/4 cup olive oil with 1 1/2 tablespoons lemon juice, 1/4 cup finely chopped mint, sugar, pepper and salt.
  2. Combine spinach with the grapefruit and green onion.
  3. Toss with poppy seed dressing, and chopped mint mixture.
