Spinach Toast

Ingredients

  • 4 slices whole wheat bread
  • 1 cup spinach, washed and finely chopped
  • 1/4 cup panir (cottage cheese)
  • 1/2 onion, finely chopped
  • 1/2 tomatoes, finely chopped
  • 1/2 teaspoon ginger paste
  • 1/2 teaspoon chili paste
  • 1 teaspoon oil
  • lemon juice

Instructions

  1. Heat oil in a pan.
  2. Add the finely chopped onion and ginger-chilli paste. Saute till light brown.
  3. Add the chopped tomatoes and salt. Mix well.
  4. Add the finely chopped spinach and crumbled paneer.
  5. Cook on high flame, till the water dries out.
  6. Add lemon juice.
  7. Spread the mixture on the whole-wheat bread slices and grill or toast them.
  8. Serve warm.
