Instructions
- Cream the cheese; add potatoes, vanilla and salt, blending until smooth.
- Add powdered sugar, a little at a time, mixing well after each time.
- Add 1 cup coconut.
- Chill thoroughly.
- Roll into balls and then in a bowl of the rest of the coconut.
- Cover closely and chill 2 or more hours.
- Much better after mellowing!
