Ingredients

  • 1 qt. string beans
  • salt to taste
  • 1 tsp. sugar
  • oil
  • water

Instructions

  1. Prepare fresh green beans by snapping into 1/2-inch pieces.
  2. Pour oil to cover the bottom of an iron skillet.
  3. Sprinkle about 1 teaspoon of sugar and salt over the oil in the skillet.
  4. Heat over medium heat until sugar begins to dissolve and crystallize.
  5. Add the prepared green beans to the skillet and cover with a tight lid.
  6. Water within the beans will cook out during the process.
  7. If beans begin to fry or stick, add a small amount of water and stir to prevent browning.
  8. Cook for about 30 minutes until the beans are tender.
