Strawberry Cheese Spread

Ingredients

  • 1 pt. strawberries, hulled, washed and quartered
  • 3 Tbsp. sugar
  • 2 tsp. fresh lemon juice
  • 1 (8 oz.) pkg. cream cheese, softened
  • 1/2 stick unsalted butter, softened
  • 1/8 tsp. salt

Instructions

  1. In a saucepan, combine berries, sugar and lemon juice.
  2. Cook, uncovered, over moderate heat, stirring and mashing berries for 45 minutes or until mixture is very thick and most of the liquid has evaporated.
  3. Cool.
  4. In a bowl, cream together the cream cheese, butter and salt.
  5. Add berry mixture.
  6. Serve as a breakfast spread.
