Ingredients

  • 9-inch unbaked pastry shell
  • 3/4 cup sugar
  • 2 tablespoons cornstarch
  • 1 cup water
  • 3-ounce package strawberry gelatin
  • 4 cups sliced fresh strawberries
  • Fresh mint (optional)

Instructions

  1. Line the unpricked pastry shell with a double thickness of heavy-duty foil.
  2. Bake at 450°F for 8 minutes.
  3. Remove the foil and bake for an additional 5 minutes.
  4. Cool the pastry shell on a wire rack.
  5. In a saucepan, combine sugar, cornstarch, and water until smooth.
  6. Bring the mixture to a boil and cook, stirring, for 2 minutes or until thickened.
  7. Remove from heat and stir in the strawberry gelatin until dissolved.
  8. Refrigerate the gelatin mixture for 15 to 20 minutes or until slightly cooled.
  9. Arrange sliced strawberries in the cooled pastry shell.
  10. Pour the gelatin mixture over the strawberries.
  11. Refrigerate until the gelatin is set.
  12. Garnish with fresh mint if desired.
