Sugar-Roasted Vegetables
Ingredients
- 2 None red bell peppers, thickly sliced ⓘ
- 2 None carrots, thickly sliced on a bias
- 2 None red onions, cut into thick wedges ⓘ
- 8 None baby beets, trimmed, quartered ⓘ
- 3 None zucchini, thickly sliced on a bias ⓘ
- 5 cloves garlic, peeled ⓘ
- 1/4 cup vegetable or olive oil
- 1/4 cup brown sugar ⓘ
- 1 tbsp fresh lemon thyme leaves + extra, to serve ⓘ
Instructions
- Preheat oven to 400°F. Combine all ingredients. Season then transfer to a large roasting pan. Roast for 40 mins, or until vegetables are tender and caramelized. Serve sprinkled with reserved lemon thyme.
