Sugar-Roasted Vegetables

Ingredients

  • 2 None red bell peppers, thickly sliced
  • 2 None carrots, thickly sliced on a bias
  • 2 None red onions, cut into thick wedges
  • 8 None baby beets, trimmed, quartered
  • 3 None zucchini, thickly sliced on a bias
  • 5 cloves garlic, peeled
  • 1/4 cup vegetable or olive oil
  • 1/4 cup brown sugar
  • 1 tbsp fresh lemon thyme leaves + extra, to serve

Instructions

  1. Preheat oven to 400°F. Combine all ingredients. Season then transfer to a large roasting pan. Roast for 40 mins, or until vegetables are tender and caramelized. Serve sprinkled with reserved lemon thyme.
