Ingredients

  • 1 baked pie shell, cooled
  • 5 c. zucchini, peeled, seeded and sliced thin
  • 3/4 c. sugar
  • 2 Tbsp. cornstarch
  • 1/2 c. lemon juice
  • 1/4 c. water
  • 1 tsp. cinnamon

Instructions

  1. Mix together in a saucepan zucchini, sugar, cornstarch, lemon juice, water and cinnamon; bring to a boil.
  2. Cook until zucchini is tender.
  3. Pour into baked pie shell.
