Summer Rice Dressing

Ingredients

  • 1 c. rice (3 c. cooked)
  • 2 beaten eggs
  • 1/4 c. vegetable oil
  • Garlic salt and pepper to taste
  • 1 Tbsp. dried parsley
  • 1 Tbsp. dried minced onion
  • 1/2 lb. grated Velveeta cheese
  • Small can of evaporated milk, plus enough whole milk to make 2 c.

Instructions

  1. Mix all ingredients together. Bake at 350° for 45 minutes. Stir, and put under the broiler to brown.
