Ingredients

  • 1 c. corn meal
  • 1 c. sifted self-rising flour
  • 1/4 c. sugar
  • 1 egg
  • 1 c. milk
  • 1/4 c. soft shortening (Wesson oil)

Instructions

  1. Preheat oven to 425°. Sift together dry ingredients; add egg, milk and shortening. Mix well until smooth. Pour in greased 8-inch square pan or greased muffin pan. Bake for 20 to 30 minutes. Serves 12 muffins. Half recipe for 6 muffins.
