Sunshine Preserves is a bright, fruity jam made with stone fruit and sweetened with sugar and lemon juice, perfect for spreading on toast or topping desserts.

Ingredients

  • 2 c. chopped stone fruit
  • enough apple juice to make 4 c.
  • 3 c. sugar
  • 1/4 c. lemon juice

Instructions

  1. Add apple juice to the chopped fruit to make 4 cups.
  2. Add sugar and lemon juice to the fruit mixture.
  3. Bring the mixture to a boil.
  4. Let it set for 1/2 hour.
  5. Return to a boil and cook for 4 minutes.
  6. Pour the mixture into shallow trays and set in the sun until thickened.
  7. Bring the trays inside at sunset.
  8. Transfer the preserves into small canning jars and process in a water bath according to jam canning directions.
