Sunshine Rice Salad

Ingredients

  • 1 c. long grain rice
  • 2 c. water
  • 2/3 c. salad oil
  • 1/3 c. white wine vinegar
  • 2 Tbsp. Dijon-style mustard
  • 1 1/2 tsp. ground turmeric
  • salt and pepper
  • 1/2 c. chopped chives or green onions
  • 1/2 lb. snow peas

Instructions

  1. Combine rice and water.
  2. Bring to a boil.
  3. Cover.
  4. Reduce heat to low.
  5. Let steam 25 minutes or until rice is tender.
